the beginning of this week started with a profound realization: I am not happy with my relationship with food.
i won’t get into weight, size, shape – etc. – it’s just too touchy of a subject, but the way that i treat food needed to change. and so it did. i woke up tuesday morning and decided that i could change at least one thing. breakfast.
i try to eat a “healthy” breakfast most days, but when i really thought about it, my breakfasts were always loaded with carbs. in fact, i couldn’t think of a single breakfast in the last month that i’d made that had NO carbs. so i thought i’d give it a try. and document it. on instagram :)
day 1: 1 egg, blueberries and a glass of coconut milk. i really like eggs, so this was yummy and sort of a treat since i rarely take the time to cook in the morning. it wasn’t quite enough to really fill me up – i was hungry a couple hours later, but some apple slices and almonds helped with that.
funny thing about eating a healthy breakfast. it makes it so you don’t want to screw up what you’ve started. it’s been so much easier to make healthy choices the rest of the day!
day 2: 2 eggs (i learned) avocado, and a clementine. loved this. the avocado and egg together were sooo yummy and so filling! and the clementine is the perfect little touch sweetness at the end.
day 3: green smoothie! this one had spinach, green apple, bananas and coconut milk. the boys had 2 servings and wanted more! it was really good, but next time i’ll add greek yogurt to fill me up a little more.
day 4: plain greek yogurt, strawberries, blueberries, almonds, pistachios, and pumpkin seeds plus a little bit of honey and coconut milk for sweetness. this was super delicious, but would have been even better if i had sweeter strawberries. don’t you hate that when your strawberries are tangy? this was the perfect amount to keep me full, and i loved adding in nuts for some crunch and texture.
i don’t know if i’ll stick to taking pictures of my breakfast every morning, but this week it helped me to think outside of the box and hold myself accountable.
